You would use whichever one that is currently on the carburetor. The reason some carburetors require the thicker gasket due to a long tower. If you use the wrong gasket you will have problems. If a thick gasket is used on the one that uses the thinner gasket you risk damaging the fuel bowl and if you the thin gasket on the one that uses the thick gasket you have fuel leakage.
This use of a thin gasket on the carburetors meant to have the thick gasket I personally seen the carburetor to leak as if the float valve wasn't sealing; otherwords, if just sitting not running fuel will run out pass the gasket area as the fuel level is above the bowl lip.
This why I stock both gaskets. And the 1/16 is an older style gasket therefore cheaper.
